Summer’s finally here, and we all know what that means: schools are out, the sun’s up until almost 9, and our summer specials are back! We use a whole third-cup of homemade pesto in each mac, plus our classic mac sauce and some sharp 2-year aged cheddar. Not feelin’ the ooey-gooey version? No problem, just ask for your mac to be made with just pesto, no sauce. Either way you go, it’s as close as you can get to summer in a bowl.
Luckily, it just so happens to pair perfectly with our heirloom tomato salad! You know, those giant multicolored ones heaped high at the market around this time of year—they’re the ones. Drizzled with a bit of fruity, zesty olive oil and some balsamic vinegar…we don’t need to say much more. So here’s a picture.
